fix(build): sync pnpm-lock.yaml to pinned [email protected] (deploy --frozen-lockfile)

The droplet deploy runs pnpm install --frozen-lockfile; hand-pinning
stripe to an exact version in package.json without regenerating the
lockfile (it kept ^22.1.1) failed the install step. Lockfile now
matches. (Prod was unaffected — deploy.sh set -e aborted before any
swap.)
